My son is in a stage where he'll only eat a few foods. Among those are:
Scrambled eggs
Strawberries
Bananas
Peanut butter sandwiches (I'm not sure if that's two-year-old food...but he had a bite of mine once and has loved them ever since)
Juice of just about any kind
Milk
Yogurt
At least most of that stuff is healthy...but I can't get him to eat much else.

Apart from the peanut butter sandwiches everything´s healthy.
Oh, wait, peanuts are also healthy. :-p
Ok, the sugar in the juices might get him very energetic... ;-)
No, seriously, just imagine he would only like candy and chips and stuff like that.
He´ll get into a age soon where he wants to taste nearly everything and will like much more then. :-)

Haha, at least he isn't SODA SODA SODA! and CANDYCANDYCANDY!
When my brother was little he would turn into a demon-child if he didn't get a chocolate bunny. Well, he's older than me by 8 years but my mom insists. Hahaha.

I forgot to add ice cream to that list. So there's another not so healthy one. Oh well, at least it has calcium I guess.

I get in my stages where I will only eat one food for a long time (3-4 months is the usual).
I've gone through a spinach dip phase lately...
Other phases have included: french toast, ramen noodles, oatmeal, quesadillas (sp?), tuna, egg rolls, eggs with tomatoes and garlic in them, vegetable soup, chicken pizza, salads, blended lettuce that I would make into a drink, cheese enchiladas, hot sauce and chips..
those have been the ones that have latest the longest...
not healthy but it makes grocery shopping very easy!

I noticed that you mentioned you are vegetarian! So are we!! Awesome. I also read back and saw that you are taking Psychology in school. Double cool. I have a BA in Child Psychology. It's really cool finding more parents with things in common.
So where do you guys live? We are in Colorado.
